
In his creative studio in the Vallée de Chevreuse, about 30 kilometres south-west of Paris, Bastien Blanc-Tailleur is preserving and developing the art of French pâtisserie, renowned since the 17th century. Here he is designer, architect, technician, sculptor, painter and baker all rolled into one, creating the most exclusive luxury cakes with his staff. Sometimes they are opulent, multi-tiered one-off pieces; sometimes, several individual pieces, arranged into elegant groupings. Sometimes the artworks are presented free-standing; sometimes, floating in the room. The wishes of his high-ranking clientele from all over the globe know no bounds. However, this luxury is limited: only 20 pâtisserie artworks are produced each year.

This pastry chef takes his time to create the perfect cake. The bride and groom’s favourite flowers, a reference to the place where the proposal was made or the wedding location: he incorporates these kinds of details into the design and recipe. When an anniversary cake is required for Chanel or Dior, the latest fabrics and patterns become the design template for the creation. A master plan is drawn up for each concept, meticulously planning all the steps leading up to the big day – the entire process can easily take six months. After meticulous research into the respective project, Bastien finally sketches his vision in precise detail – this becomes the blueprint for his 17-strong team, which is constantly faced with new challenges: how can you design jasmine, pompom dahlias or peonies to be as true to life as possible? How can you reproduce the columns of the Alhambra or the stucco façades of a French castle to perfection? What kind of ornamentation does an historic Indian palace have? Creative ideas that may appear impossible at first ultimately create a unique magic, delighting the newlyweds and making all the difference on their special day.
Bastien Blanc-Tailleur found his purpose in life early on: as a child, he looked over his grandmother’s shoulder as she introduced him to the French baking traditions, and as a teenager he learned the art of pastry from the ground up. He honed his expertise in various renowned kitchens, most recently as sous-chef of a luxury hotel in Paris. In 2015, he opened his own studio – garnering remarkable success: his name and expertise soon became highly sought after and he has even been awarded the prestigious ‘Entreprise du Patrimoine Vivant’ label. His secret? Absolute perfection and dedication – no compromises. Craftsmanship at the highest level. And the courage to think outside the box and even be slightly crazy. ‘That,’ he says, ‘is the only way to achieve excellence.’
Each creation is masterfully handcrafted; each, a unique piece that tells its own story. And behind the beautiful facades? When the creation is cut, it reveals delightful flavours created by a top pastry chef who is preserving and reinterpreting the heritage of the great French pâtisserie tradition. It goes without saying that Maison Bastien Blanc-Tailleur also ensures that when it comes to ingredients, only the best are used: fresh fruit from the terroir, the finest creams, refined with Charentes butter and the fragrant aromas of Tahitian vanilla or Menton lemons; these are composed into temptations that are impossible to resist. ‘My vision is for each of our cakes to leave a lasting impression, both in terms of flavour and aesthetics. For me, the quiet signature of excellence lies in every detail, which remains in the memory long after you have tasted the cake.’ And it’s clear – he succeeds brilliantly.
